Yesterday we had friends over for Sunday lunch. We decided to make spaghetti with either a marinara (seafood) sauce and a mushroom sauce. I could have easily cooked up some spaghetti out of a packet but since I had a bit of time I decided to make it myself. It's really easy and lots of fun!
All you really need is eggs and plain flour, but I also added some oil, water and salt. I was cooking for thirteen people and used 10 eggs and 1kg of flour and we definitely had enough!
Make a well in the centre of the flour and crack the eggs into the well.
You can give/take some oil or water to make the dough just the right consistency. If it is too wet, it will stick to the machine but if it's too dry it will crumble. Just add small bits of liquid at a time until you have the right consistency! And be sure to flour all the bench and the machine and the pasta. It's really quite a messy activity!
For 1/4 of the pasta I added some tomato paste instead of water. There's an endless amount of possibilities regarding flavouring your pasta! The sky is your limit but I've also heard of herbs and silver beet or spinach.
Did I not tell you it was a really messy activity? You should have seen the floor!
You will have to let the pasta sit for about 20 minutes in glad wrap before rolling it out with your pasta machine. Go through once or twice on the widest setting and then each time, narrow it down 1 or 2 thicknesses until you get sheets of your desired thickness.
The cutting was lots of fun. Our guests had arrived by this time so we had people feeding the sheets through, people catching the strands, people turning the handle, people looking on and people taste testing. As you can see, we used a lot of flour so that the dough didn't stick to the machine or together.
Because the pasta is fresh, it only takes a few minutes to cook on the stove in boiling water.
It was a great meal. It tasted delicious and we were surrounded by friends and family - a great way to spend a Sunday.
